Introduction |
Glutathione is a tripeptide compound formed by the condensation of glutamic acid, cysteine, and glycine through peptide bonds. It is the most important low molecular weight thiol for antioxidant stress in mammalian cells. Discovered in 1921 and its chemical structure determined in 1930, Dr. Al Mindel, a renowned American nutrition and healthcare expert, referred to glutathione as a triple potent anti-aging amino acid, also known as the antioxidant master of nature in Chemicalbook. It appears as colorless, transparent, and elongated granular crystals, soluble in water, dilute alcohol, and dimethylformamide, but insoluble in ethanol, ether. When solid, its properties are stable, and its aqueous solution is easily oxidized to oxidized glutathione in air. It is widely present in bread yeast, wheat germ, animal liver, chicken blood, pig blood, tomatoes, pineapples, and cucumbers. |
