Introduction |
Astaxanthin is found in the feathers of microalgae, yeast, salmon, trout, krill, shrimp, crayfish, crustaceans and some birds. It provides the red of salmon meat and the red of cooked shellfish. Astaxanthin, unlike several carotenoids and another known carotenoid, cannot be converted into vitamin A in the body. Astaxanthin, like other carotenoids, has self-limited oral absorption and low toxicity, so there is no known toxic syndrome. It is an antioxidant with slightly lower antioxidant activity than other carotenoids in some model systems. However, in organisms, the radical termination potency of each carotenoid is heavily influenced by its fat solubility and therefore varies with the type of system being protected. |
