Curdlan Gum is a linear polysaccharide composed of glucose, belonging to a special member of the β -1,3-glucan family. It is insoluble and highly stable, and can form high strength thermal irreversible gel by heating. Function |
Food industry: Curdlan Gum was approved by the FDA for use as a food ingredient in the United States in 1996. It is insoluble in water, but can expand and disperse in cold water, forming colloids when heated. According to its properties, it can be divided into low colloids and high colloids. Curdlan glue can reduce the water loss rate of frozen meat products and extend their shelf life. Gel formation: Curdlan forms a low strength reversible gel when heated to 55~65 ° C, and a high strength irreversible gel when heated above 80 ° C. The strength of gel depends on the concentration of Curdlan and heating time. The higher the concentration and the longer the heating time, the greater the strength of gel.
