Calcium gluconate is a calcium salt of gluconic acid, which is a white crystalline or granular powder with a melting point of 201 ºC. It is odorless and tasteless, soluble in cold water, and easily soluble in hot water. Calcium gluconate is a white crystalline or granular powder. Melting point 201 ºC (decomposition). Soluble in water (3g/100ml, 20 ºC), easily soluble in boiling water (20g/100ml), with an aqueous solution pH of about 6-7. Insoluble in ethanol and other organic solvents. |

In the pharmaceutical field:calcium gluconate is used as a drug to reduce capillary permeability, increase density, maintain normal excitability of nerves and muscles, enhance myocardial contractility, and aid in bone formation. Food industry: As a food additive, calcium gluconate is used as a buffering agent, curing agent, chelating agent, and nutritional supplement. In China, according to the "Hygienic Standards for the Use of Food Nutritional Fortification Agents" (1993) issued by the Ministry of Health, calcium gluconate can be used as a calcium fortifier in grains, their products, beverages, and other foods. Making tofu pudding: in food processing, calcium gluconate is used to make tofu pudding, and calcium gluconate powder is put into soybean milk to make soybean milk become semi liquid and semi solid tofu pudding, sometimes called hot tofu. |
